Buon Appetito!

Today, we had our first of two cooking classes that we're taking as part of our study abroad program. Let me tell you... If I wasn't already obsessed Italian food before today, the cooking lesson we had tonight sealed the deal. We made an appetizer, two pasta dishes, and dessert, and then afterwards, we got to eat all of the food we made.




The appetizer was Millefoglie di Verdure, which was basically slices of eggplant sandwiching a mixture of potatoes, zucchini, and cheese. I wasn't sure if I would be a huge fan of eggplant, since I had never tried it before, but this dish was amazing!

The first pasta dish we made was Ravioli di Ricotta e Spinach. We made the pasta dough from scratch, mixing it together, kneading and rolling it out, and running it through the rolling machine. After the dough was one long, thin piece of dough, we squeezed drops of the ricotta-spinach mixture onto the rolled out dough. Then we folded it over, squeezed out the air pockets, and cut the ravioli into individual pieces. 

 





The second pasta dish we made was Fettucine con Salsa all'Arrabbiata (Angry Sauce). We used the same dough mixture, but switched the roller to make fettucine noodles instead of just rolling out the dough.


For dessert (i dolci) we made tiramisu!







They gave us a cookbook at the end of our lesson, so hopefully I'll be able to recreate all of these dishes when I get back home!
